After being off the grid for nearly two weeks, I was excited to catch up with friends this week. Since I didn’t really want to wait until the weekend to do so, I decided to propose some mid-week fun. Maybe pizza out? Or even tacos at my house? To my surprise, 10 friends were available for taco night!
I scrambled to the grocery store just before closing to get all of the ingredients on Tuesday night. We don’t have many good Mexican options here, but the Old El Paso brand gives us something to work with. I also decided that this was the perfect opportunity to make some heart-shaped sugar cookies for Valentine’s Day. Some of you may remember the debacle with the heart-shaped cookie cutters last year. This was my chance to redeem myself.
When I was home in the fall, I ordered heart-shaped cookie cutters from Amazon – just so I would never be caught unprepared again. Without knowing it, Mrs. Claus (aka my mama) also bought one to put in my Christmas stocking. So now, I have more than enough heart-shaped cookie cutters. Not sure if this is a case of great minds thinking alike – or just a scary example of how similar we are!
Unfortunately, I got so excited about catching up with everyone that I forgot to take any pictures of Taco Night in action! All I can tell you is that it was super fun and super delicious! One of our newest American expats came over for the first time. And guess what?! He’s a fellow Miami grad! Love and Honor.
Big thanks to one of my Nashville friends who sent me home with her favorite salsa when I visited in the fall. I’ve been saving it, and Taco Night seemed like the perfect opportunity to share it!
